Living at the Jersey Shore means you benefit from the farmers’ markets that provide you with locally grown produce, so you can take it from farm to table. Nothing beats a Jersey tomato, whether you enjoy it in a sandwich or use it to make your very own signature sauce. Here is a simple recipe…roast plum tomatoes in the oven or BBQ for approximately 30 minutes on 400 degrees. Turn the oven off and let the tomatoes sit in the warm oven for another 20 minutes. Remove the skin and place the roasted tomatoes in a bowl with chopped garlic, fresh basil, hot pepper flakes, a drizzle of extra virgin olive oil and a pinch of salt.
